RECIPE: Squash Au Gratin aka Squash Casserole

This is one of my absolute favorite squash recipes. With it being mid-summer there is plenty of home-grown squash to make this recipe often. Thankfully, my 3 boys like it as much as I do.

Ingredients:
  • 2 lbs. yellow squash
  • 1/2 tsp. sugar
  • 1 tsp. salt
  • 1 stick butter
  • 2 c. (8 oz) shredded cheese - I use cheddar
  • 1 1/2 c. Club or Ritz crackers - crumbled
  • 5 oz. can evaporated milk
  • 2 eggs - beaten
  • 1/4 tsp. black pepper
Directions:
  1. Preheat oven to 325°.
  2. Wash and slice yellow squash, boil with sugar and salt for 5 minutes or until fork tender. Drain well.
  3. Add butter and stir until melted, add 1 c. shredded cheese, 3/4 c. cracker crumbs, evaporated milk, eggs and pepper. Mix well.
  4. Pour into a 2 qt. baking dish. Top with remaining shredded cheese and cracker crumbs.
  5. Bake for 30-45 minutes - until bubbly and top is golden brown. Serves 6-8.
