Ingredients:
- 2 lbs. yellow squash
- 1/2 tsp. sugar
- 1 tsp. salt
- 1 stick butter
- 2 c. (8 oz) shredded cheese - I use cheddar
- 1 1/2 c. Club or Ritz crackers - crumbled
- 5 oz. can evaporated milk
- 2 eggs - beaten
- 1/4 tsp. black pepper
Directions:
- Preheat oven to 325°.
- Wash and slice yellow squash, boil with sugar and salt for 5 minutes or until fork tender. Drain well.
- Add butter and stir until melted, add 1 c. shredded cheese, 3/4 c. cracker crumbs, evaporated milk, eggs and pepper. Mix well.
- Pour into a 2 qt. baking dish. Top with remaining shredded cheese and cracker crumbs.
- Bake for 30-45 minutes - until bubbly and top is golden brown. Serves 6-8.
